What Makes Fabiano's Coffee Different

Fabiano's Coffee has been a Fresno roastery since 1993 — one of the longest-running specialty coffee operations in the Central Valley.

We roast on a Diedrich IR-24K, an infrared drum roaster that heats the drum evenly and gives us precise control over every batch. There's no automation. Every roast is hands-on, start to finish.

We source green coffee from importers we trust, buying traceable lots from farms and cooperatives. Our lineup rotates but typically covers origins from South America, East Africa, Indonesia, and the Middle East. Each origin gets its own roast profile because different coffees need different approaches — what works for a washed Ethiopian doesn't work for a wet-hulled Sumatran.

Every Monday is roast day. By the end of the day, every bag we sell that week is fresh. Whether you buy it from us at Vineyard Farmers Market on Saturday morning or order it online and get it shipped mid-week, you're getting coffee roasted days ago, not weeks or months.

The market has been our home base from the start. We're at Vineyard Farmers Market every Saturday from 7am to noon. It's where we talk to customers, get feedback, and figure out what to roast next.

We also partner with local businesses across the Central Valley. One of our favorite partnerships is with Fresno State's Gibson Farm Market, where we worked with agriculture students to develop a line of campus coffees — Bulldog Blend, President's Blend, Victor E. Blend, and others. Students learned about product development, sensory studies, and the business side of specialty coffee through the partnership.
